Homemade Lemonade

This lemonade is an old and great favourite - despite the fact it always turns out slightly different every time!  However, it is always delicious and perfect in this weather.  The downside is that you need to plan ahead and make it in advance so it can steep overnight.

 

Ingredients

3 lemons

1 pint water

1 lb of sugar (sometimes you need a little less, sometimes a little more)

A bit of citric acid (optional)

Put the sugar and water into a saucepan and heat until the sugar is dissolved.  Add the grated lemon rind and citric acid (you can make this without the acid if you don’t have any).  Cut the lemons in half and add to the syrup then bring to the boil.  Leave overnight – I put it all in a mixing bowl and cover with a plate - then decant through a sieve into a handy bottle.
